Berry Spread {coconut sugar sweetened}

This gooey smooth berry spread can be made with just about any berries you like, the trick is to add a little sweetener of your choice and then add a splash of arrowroot, corn or other starch to thicken things up. It’s perfect for spreading on cakes, cupcakes or toast.

Ingredients
  1. 1 cup Raspberry or Strawberries or 1/2 cup each
  2. 2/3 cup Coconut Sugar
  3. 1 tsp. water
  4. 1/2 tsp. Cinnamon
  5. 1 tbsp. Agave or Maple Syrup
  6. 1/2 tsp. Vanilla Extract
  7. 1/2 tsp. Arrow Root Starch or Tapioca Starch
Instructions
  1. Add all ingredients in small pot and simmer on medium-low heat
  2. As berries soften, crush with potato masher or fork
  3. Let cook on medium to low heat until mixture reduces and berries are well cooked
  4. Dissolve Starch in small amount of water and add to pot slowly while turning until mixture starts to thicken up.
  5. Remove from heat and let cool
