Gluten-Free Berry Shortcake – Vegan

In honor of Mother’s day and Celiac Awareness month we’re celebrating with a simple and delicious gluten-free, berry shortcake with a homemade fruit spread! Everything is dairy, nut, gluten, soy and egg free! Check out the recipe here:

 

Gluten-Free Berry Shortcake {Vegan and Soy-free}

Dry Ingredients
  1. 1 1/2 cup Authentic foods cake flour
  2. 1/3 cup Coconut Sugar
  3. 1 tsp. Baking Powder (Bobs Red Mill)
  4. 1/2 tsp. Baking Soda (Rumfords)
  5. 1/2 tsp. Cinnamon
  6. 1/4 tsp. Himalayan Sea Salt
Wet Ingredients
  1. 1/4 cup Light Olive Oil
  2. 1/2 tsp. vanilla extract
  3. 1 cup. Seltzer or Club Soda
  4. 1 3/4 tsp. Apple Cider Vinegar (Braggs)
Instructions
  1. Add wet ingredients to dry and mix until combined
  2. Pour into greased cake pan
  3. Bake for 45 min. or until a toothpick inserted in the center comes out clean and cake is springy and golden brown.
